Caring for Your Grease Trap
A grease trap is a required (and regulated) part of any commercial kitchen. You’ll also find them in other commercial settings like car washes, gas stations, and laundromats. Grease traps play an important role in protecting the environment and our water supply. So how should you go about maintaining your grease pump?
Do not use your grease trap as an excuse to pour waste down the drain.
A common misconception with grease traps is that it’s okay to pour grease, fats, and oils down the drain. This is simply not true. Grease traps are only designed to capture excess FOG (fats, oils, grease). We’re talking that little film of grease in a saucepan or on a plate. We’re not talking an entire fryer’s worth of grease!
Good drain etiquette still applies, even if you have a grease trap. Continue to dispose of food, scraps, and oils in the trash can. Your grease trap has plenty to do capturing the grease residue from dishwashing.
Schedule quarterly pumping and maintenance.
Grease traps are just like anything else; they require regular maintenance to function correctly for the long haul. Quarterly inspections and pumping keep your system running smoothly (and helps you stay in the good graces of the health inspector).
Keep an eye out for grease trap damage.
Hydrogen sulfide (H2S) gases slowly build up inside of your grease trap. Over time, these gases eat away at the container. Most outdoor grease traps are made of concrete, so you might notice concrete crumbling or flaking off. Metal is more typical of indoor grease traps, and you’ll notice pits, rust, and deterioration.
If you see these signs of damage and age, it may be time for a replacement. Schedule a free estimate.
